Give Me Three Pigs

No, not the song by the Electric Amish. I had the privilege of being part of an old fashioned hog butchering today. The kind I grew up with. We butchered three pigs.

Smoked sausage.
Pon Haus (scrapple)
Lard
Cracklins
Fresh pork loins smoked on my Weber grill

All with beloved friends in the beautiful NC hills.

Oh yeah!

Sounds tasty. I think the best time to be involved is about a week later when the grill is fired up...

I helped butcher a steer once, kinda by accident. It wasn't supposed to happen but it did.

Butchered chicken already, that was fun. Also used to raise rabbits for meat.

Never did a pig.
