Here's one I enjoy in the fall when our butternuts are ready.
spicy butternut squash soup
1 3 lb medium butternut squash peeled, seeds removed, cubed
4 cups chicken broth
14 oz full-fat coconut milk
1 medium yellow onion
3 Tbsp. olive oil divided
5 cloves garlic
4 (more or less to taste) jalapeño peppers
1 inch fresh ginger peeled and grated
3 Tbsp. brown sugar
2 Tbsp. curry powder
3 tsp sea salt divided
1 Tbsp ground cumin
Optional garnishes: Pumpkin seeds, Candied pecans, Diced apple, Maple syrup

That looks delicious, except for the jalapeños.JimFoxvog wrote: ↑Fri Jun 14, 2024 6:46 am Here's one I enjoy in the fall when our butternuts are ready.

The jalapeños are what makes it great! Add more if this isn't enough.

Jalapenos go well on a lot of things. That pepper is my threshold when it comes to spice. I can handle more heat, but I pay for it in the end

I daresay it would be delicious without the jalapeño peppers. My wife states the soups are her “pantry meal ideas”: whatever is in the pantry is what becomes the soup.

Sounds amazing. Are there more detailed recipe instructions?JimFoxvog wrote: ↑Fri Jun 14, 2024 6:46 am Here's one I enjoy in the fall when our butternuts are ready.

I'm just pointing out that beans are not part of any authentic or traditional Texas chili recipe. Texans can be hysterically adamant about that. And while beans are a staple in Mexico, they are also not mixed into any Mexican stewed meat dishes as well but always served on the side.steve-in-kville wrote: ↑Fri Jun 14, 2024 5:58 amSo all the chili eating contests I watched on YouTube were not authentic?Ken wrote: ↑Thu Jun 13, 2024 5:03 pmJust don't go to Texas. They will have a conniption if it has beans in it. Correct Texas chili is meat and chili peppers only with maybe onions, garlic and other spices but no tomato. And not hamburger either but shredded meat like chuck roast. Putting beans in chili is sacrilege.ohio jones wrote: ↑Thu Jun 13, 2024 2:09 pm
One of my pet peeves. Of course if the liquid content is high enough, it doesn't really qualify as chili, so it might as well be called soup.
If you look up actual Texas chili contests you will find that beans are forbidden. For example, here is the Texas Chile Cook-off Competition: https://chilifest.org/chili-cook-off/
Scroll down to the rules and you will find
There shall be no fillers such as beans, rice, pasta, potatoes, etc.

I did not know that! A few weeks ago I made a pot of Charo beans that turned out relatively well for making it the first time.

The last time I was in Texas, I was served chili with beans in it. Your information on Texas may be somewhat out of date.Ken wrote: ↑Thu Jun 13, 2024 5:03 pmJust don't go to Texas. One of our young adult children loves jalapenos, she bought some plants at the local greenhouse and planted them in our little garden. Later we made a tomatillo and pepper salsa. I used gloves, but some still got on my skin and it burned. Can't imagine what they do to your insides.
