My guess was correct.

I forgot about Utah and had picked the next one being Alabama. Why so few Anabaptists in Utah ?

Not excuses here, just reasons:
A. Heavy influence of Mormon culture.
B. Only 3-4% of Utah is cropland.

One of my favorite churches to visit is there.
I’m pretty sure I know of at least three Anabaptist churches there.

The second largest religious group in Utah is ... wait for it ... Catholic.
Appears as though the Anabaptist groups have a job ahead of them in Utah.

Also, there are two and possibly more churches near Salt Lake City/Ogden/Provo, and I don’t know that there’s a lot of population anywhere else, other than maybe cedar city. There’s also a church directly across the border west of Grand Junction, Colorado.
Honestly, given the size of the state, they are a lot better represented then somewhere like Louisiana.
Although, Green River is the place to be…

When my Mormon Uncle & Aunt were relocating to Utah around 50 years ago and my uncle told us it was easier to buy there if you were Mormon, not sure how, I can imagine why though.

It was likewise in the UK during the antiCatholic Recusancy Acts and Penal Laws. It was much easier for members of the COE, COS and COI to acquire lands (Churches of England, Scotland, and Ireland).
History is replete with persecutions of every faith group and ethnicity. We can learn from it, both give and accept apologies, and endeavor to behave more in keeping with Christian Discipleship.
