Who Likes Dandelion Gravy?

Post by Valerie »

Every Spring I look forward to this in Holmes county ( hubby, not so much)

I found a recipe do am looking forward to making it soon, we have plenty of dandelion leaves: (dandelions are a health food but I imagine the gravy is not)

🥬 Amish Dandelion Gravy & Salad
• ½ stick of butter
• 1 tablespoon flour
• 3 cups milk
• 3 hard-boiled eggs, chopped
• 1 /2 pound bacon, chopped
• 1 tablespoon sugar
• 1 teaspoon white vinegar
• 1 1 /2  cups dandelion leaves, washed

1. Make a gravy by browning butter then adding flour and milk. Stir until smooth.
2. To this mixture, add chopped hardboiled eggs, chopped bacon, salt and vinegar to taste. If you prefer, you may leave out the vinegar.
3. Last, add fresh clean dandelion greens and stir until just wilted.
4. Serve over boiled potatoes (mashed slightly with a fork) or mashed potatoes

Growing up, we always did dandelion leaf salad with hot bacon fat dressing - onions, bacon fat, and vinegar were the main ingredients.

Once the dandelions have bloomed, it's too late, they get bitter.

1. Are we discussing the topic? Good.
2. Are we going around and around in a fight? Let's stop doing that.
3. Is there some serious wrongdoing or relational injury? Let's address that, probably not in public and certainly not for show.

Are you referring to the yellow flower bloom or the feather white bloom you blow?

There’s a Dandelion Festival in Amish country (OH) first weekend in May every year and they do all kinds of dishes with Dandelion leaves. You look at dandelions in a whole different light afterwards.

My grandmother would feed me dandelions but I don't remember liking them much. It was easy to be suspicious of her feeding you stuff because she also tried to make me eat dried pine sap if I got the sniffles. Maybe I would have more warm thoughts about it if the recipe involved more butter and bacon grease.

After the yellow flowers appear, I do not eat dandelions. I eat them up until then.

I am neither plain enough nor Appalachian enough to think of dandelions as food, despite technically being both things.

My family eats dandelions in all kinds of ways but most often as a wilted salad. The roots they dry and grind up for tea.
Poke salad and creasy salad are also eaten. Wild ramps and wild garlic are too. All of these are free foraged.

Wife: Dandelion gravy is one that I never heard of before. A girl with Amish background introduced us to fried dandelions where we breaded them and fried them in a pan and it was really good. We would pick the yellow flowers and use that.

It’s ironic, because I still can imagine the taste of dandelion heads from when I tried them as a child, and they were disgusting, but fried up, it’s great. I’ve also had dandelion tea instead of coffee at somebody’s house, and that was decent
