Do Anabaptists celebrate the American or Canadian holidays of Thanksgiving?
Ham finished smoking. Trying to decide if I want to cold smoke some cheese.

Every Mennonite family I know does family Thanksgiving dinners as a tradition. I don’t know about the Amish.

Thanksgiving isn’t a religious holiday. It is a family holiday.

We have a District Thanksgiving Service. Consists of 3 churches, usually meeting at one church.

I want to hear about cold smoking cheese. That sounds intriguing.

You have to have a method of generating wood smoke without heat. There's a way to do it in a pellet smoker that involves maintaining pans of ice, and that's where my first effort went awry because I had to leave for awhile and thought the ice would hold for the rest of the cook.
Now the smoked cheese was delicious, it just looked funky.
The better way is to use a
cold smoke tube, which you can get for 10 bucks or so on Amazon.

Is there any point to smoking cheese other than to give it smoke flavor?
Smoking fish and meats is a method of food preservation. Is that the same for cheese or is it simply to add flavor?

Just to add flavor, as far as I know, but my guess is that it may add a little shelf life. I usually vac pack it, and it keeps for many months in the fridge that way.
