Ham finished smoking. Trying to decide if I want to cold smoke some cheese.
My experience has been to use it as a day of family and fellowship, similar to Christmas. Neither had much of a religious component like services.

This position is hard to explain to Catholics and high church Protestants for whom it is sacred and to Adventists or JW's for whom it is pagan and demonic.

Same here, it's basically just a reason to have family gatherings and some vacation from work or school. Not that there's anything wrong with talking about being thankful in November or Jesus' birth in December, but there isn't much reason to restrict thinking about those things to the "holidays" designated for that purpose.

I guess nobody does...
Thanksgiving isn’t a religious holiday. It is a family holiday.
We treat it as a religious holiday and hold services. Not sure why you see a difference between family and religion

During our services we are surrounded by not just our earthly family but also our spiritual family, brothers and sisters in Christ.

Which Mennonite churches traditionally have a special church service on Thanksgiving? I don't think any of the ones I am familiar with do that.

Washington/Franklin Conference - Churches in this conference also have a special service on Christmas, Good Friday, and Ascension Day.

A wee little man can’t say, I’m sorry. A big man owns his mistakes and apologizes.
A wee little man trusts himself and his own discernment. A big man is humble enough to know that he needs the counsel and input of others.

Like Mike said the cold smoke tube is better for smoking cheese. It's what I use. I went ahead and started smoking some gouda cheese in 1 lb blocks. I like to vacuum seal them too and give them to friends for Christmas.

Thanksgiving is an American holiday and not part of any Christian tradition unlike say Easter, Good Friday, Christmas, Ash Wednesday, Epiphany etc. You cannot trace Thanksgiving to the Bible. That doesn't prevent Christians from holding religious services on Thanksgiving. Since there is obviously a religious element to giving thanks. But it isn't part of any religious tradition outside the US. Menno Simons and the early Anabaptists would have no knowledge of Thanksgiving. Nor would any of the Mennonite and Amish immigrants from the Palatinate who settled in Pennsylvania and later Ohio in the 18th Century. Since Thanksgiving did not become an actual holiday on the 4th Thursday of November until Lincoln declared it a national holiday in 1863 after the Battle of Gettysburg.

The American tradition on Thanksgiving is to gather with family rather than worship some sort of Thanksgiving church service that honors some aspect of Christian tradition like every other religious holiday. Some churches do hold Thanksgiving church services but it isn't in any way universal. Nor is it in any way exclusively Christian. People of every religious tradition in the US from Muslims to Hindus to Buddhists celebrate Thanksgiving with their families. As do many native groups such as the Haudenosaunee: https://americanindian.si.edu/environme ... ddress.pdf

I want to hear about cold smoking cheese. That sounds intriguing.
You have to have a method of generating wood smoke without heat. There's a way to do it in a pellet smoker that involves maintaining pans of ice, and that's where my first effort went awry because I had to leave for awhile and thought the ice would hold for the rest of the cook.

Now the smoked cheese was delicious, it just looked funky.

The better way is to use a cold smoke tube, which you can get for 10 bucks or so on Amazon.
Can you do it with a charcoal or hardwood smoker or do you have to use a wood pellet one?

Maybe so, but the problem is keeping the heat down while generating smoke.
