What if we would wait to make a judgment about these things until "we know as we are known".
It does seem like Peter, the other Apostles, and the other elders should be able to give their side of the story before we draw a conclusion.
Otherwise, we are like a bishop committee showing up at a church, which listens to one influential person describe another influential person, and then proceeds to silence the one who is being accused, without ever hearing the other side of the story.

To me, Galatians is scripture, and therefore trustworthy. The early church discerned what they should include as scripture, and I assume they did not throw Peter under the bus.

I think that's a different situation than the one you describe. If there are two people in a congregation telling different stories, neither story is scripture.

Peter does weigh in on some of these same issues, and Acts shows his evolution starting with Acts 10. And Peter wrote some wonderful passages on our unity as Christians, across the lines that divided Jews and Gentiles.
But you are a chosen people, a royal priesthood, a holy nation, God’s special possession, that you may declare the praises of him who called you out of darkness into his wonderful light. Once you were not a people, but now you are the people of God; once you had not received mercy, but now you have received mercy.
