My wife makes hers then vacuum seals it in portions that she knows we will eat. The rest she freezes. I did not know that guacamole could be frozen. Local Mexican restaurant makes the nicest I’ve tried. Wife: the sister-in-law in Sidney really misses proper Mexican food also. I'll east it every once and again. I few local stores have it made fresh daily and that is the only way to consume it. only a small fraction they sell is actually raw fish. I cannot eat it plain and therefore add the provided ginger and wasabi to each piece.

I am definitely in the fried seafood camp.
