Western NY is full of all kinds of Anabaptists. I used to associate with (former) Old Order Mennonites around Keuka Lake.
There is also the closest thing to a conservative Mennonite college in Guys Mills, PA (Faith Builders Educational Programs) which isn’t too far from you. It has a lot of college students who represent diverse backgrounds. Some of them may be willing to participate in your research. You could contact their administration and find out more. Ernie here on this forum has a lot of contact with them.
As far as the Old Orders - I would ask around/call around to see who on a local community could help you further. Your best candidate may be an Old Order Mennonite man who earned his Ph.D from Penn State, who lives near that area. I had supper with his cousin last Monday and he was trying to get me some contact info and I’d be glad to share it once I get it. This gentleman would be very familiar with conducting academic research.
