I would describe the reason not due to growth, but due to the transition away from farming and due to having larger wedding guest lists thanks to using modern long distance transportation.

I also find it interesting that the Amish growth in numbers at weddings creates a need for this. They are creative in their solutions too.

I would not call it particularly "creative" to adopt the customs of the world when it comes to weddings & receptions.

I've been to an Amish wedding inside a temporary structure, although it was just a plain two-by-four framed structure with plastic put up by family and friends, not the fancier greenhouse-type structure in the article. My parents who were Amish until their 30s have said more than once that Amish weddings in Lancaster, PA have grown significantly in size and in lavishness of food served. I don't know whether this trend is typical in other areas besides Lancaster.
