I like to slow roast the turkey, maybe at 225°F until it just gets to a 165°F internal temperature. The gizzard is blended with drippings and broth for the gravy.
I do leftover turkey all sorts of ways. Gravy and poultry seasoning over bread or potatoes, and curried over rice are the most common.

I roasted our breast side down for a bit then turned it.
Leftovers - much gets cut up and frozen for future use in soups. But we made some into turkey salad and even added some rehydrated craisins to it and it was delicious.
As for neck, gizzards, etc. I put in water and cook for broth to use with gravy. My mom loved to dice them and fry them in butter sometimes even added onion and celery when frying them. Often she ate them on a slice of white bread. I'm not a fan.
