What’s for supper?

Post by Reflecting »

If mennonet already has such a thread I missed it.

Earlier this week I felt like it was such a crockpot kind of a day. I had chicken, carrots and celery that needed to be cooked up so I threw it together with water, salt, pepper, garlic, and onion.
Lunch the last two days has been a bowl with a healthy dose of some southwest dip mix we sell that I picked up to try. Not bad. Love what it added although I probably wouldn’t have started out with celery and carrots if I hadn’t need to use them up.
Now what I really want is to cook up some wide noodles and add my crockpot concoction and this time add a nice pinch of parsley! That’s my plan for a quick, late, delicious supper.

Most of my cooking ends up like this. Totally wing it.

Anyway, if you’d like to share what’s for supper at YOUR house, what you are hungry for, or any other mildly food-related issue, here’s your space. ;)

Edited to say, if such a space does already exist I invite to mods to feel free to clean it up. I just didn’t find it here but remembered one such from MDland.

I planned to get some venison out of the freezer for a stew. When the unlabeled package thawed I discovered it was a portion of a goose I butchered a couple years ago. It had a little bit of a freezer burn smell, so I added some lemon juice, along with a healthy helping of sage, celery salt, rosemary, thyme, and a few other things. Added garlic, onion, potatoes, and an acorn squash that needed using. Turned out quite tasty.

at last, so glad to see this thread. :D
i have 2 recipes in mind i’d love to add, i’ll have to consult with my daughter+grdaughter, they enjoy cooking+baking.

one is a succulent Korean bbq, made in the crock pot, which she has adapted for the instant pot.
the other is for ground beef+lamb combination grilled patties, served with a savory butter, i believe, made with fresh garlic and shallots.

i miss the coffee discussions, too. esp Country Boy’s coffee routines combined with tales of chasing his girls around the house. i believe they added a boy to that mix.

Peanut butter - From the Today thread, Page 89:

We just invented a new sandwich here. Peanut Butter and Cranberry Sauce. Seems to be a winner. Easy to make too. Just one slice of the Cranberry sauce out of the can and slap some PB on the other slice of bread.
i like both Concord grape jelly (jam) and cranberries-many-ways, but .. :D
years ago, when we had a nice garden with fresh Romaine lettuce, and i was weekly baking our whole wheat bread supply, somehow, we stumbled upon the combination of peanut butter and LETTUCE on whole wheat. i have not returned to sweet and peanut butter.

there is something about fresh, crisp lettuce with pb.

my mother used to make Concord grape jelly and apple jelly. backyard fruits.
home made was .. (sigh) .. memorable.

This evening I was full on random food I bought elsewhere (that statement sponsored by Big Lots), but I have my experimental chili sitting in the fridge. Currently, it consists of bacon bits, kidney beans, salsa, and barbecue sauce. Next time I'll probably swap out the barbecue sauce for some pancake syrup and tomato paste in service of a milder flavor + additional thickness.

I’m not sure about what my wife is planning for supper unless it’s a special holiday. She’s the captain of the kitchen not me.

Found the Korean-Style Ribs recipe. :D
“The Gourmet Slow Cooker, Volume II” / Lynn Alley / Williams Sonoma Cookbook

“slow-cooker korean-style ribs” / page 40 ^^
https://thefairyandthepumpkin.typepad.c ... -ribs.html

Made with pork or beef ribs. i think she used pork.

The book is paperback. But, a very nice quality+size paperback.
Affordable used copies are easy to find.

.. .. thinking, thinking ..
my dear mother-in-law made a fabulous RHUBARB CUSTARD PIE in springtime. o.my.
rhubarb from their garden. she and her mother had a few delicious rhubarb recipes.

if i can find that recipe .. that pie, with a up of coffee ..

i watched a few of this woman’s videos.
sigh. they made me wish we’d thought to video my mother cooking a few fav recipes. :)
why didn’t we think of that?!

these videos are based on cooking during the Depression.
this lady is of Italian descent, her mother did not speak English, but, her recipes are similar to some of my mother’s. i like my mother’s touch better, but, there are similarities - in the Depression, there wasn’t much variety in available foods. my mother and grandmother made home made noodles, my mother used boxed spaghetti and macaroni, she didn’t branch out from there.

Great Depression Cooking with Clara / Twice Baked Potato

my mother’s name was Clara, i suppose that’s part of the nostalgia here.

Saturday night is usually leftovers - a bit of this and a bit of that but we had leftovers Thursday night and Friday noon so not sure what to expect tonight. Maybe a macaroni casserole. Tomorrow night will probably be grilled cheese sandwiches with home made tomato soup.

Thursday rice and beans and tortillas and cabbage.
Saturday pizza
