i have found out that veggies are much much better if there is a little bit of crunch to them.

My mother in law cooked her veggies to death and when we first moved to the farm and had a shared garden and I picked green beans she felt I was wasting bean as I picked them younger- you couldn't detect beans bulging from them- and steamed mine- some crunch- they were called Yankee beans by folks in VA
My one sister in law had never had beans like mine but in later years started picking them younger like I did and cooked them like I did.
I enjoy the canned green beans but prefer the steamed ones.

Best soup I ever had was a roasted squash soup. Our head chef at work made it for an employee luncheon. He told me to take the leftovers home. The family scoffed it up like they hadn't eaten in a week.

The majority of the veggies we eat are roasted in the oven. They actually taste better done on the "harder" side.

My one grandma grew her own saffron and made the best saffron gravy!
My other grandma made homemade bread, homemade butter and grandpa would get real honey with the comb. That was a special treat.
