I think people are responsible for their own choices. That is why I think it's important what we choose to do. I'm not willing to knowingly deliver the ammo to the next mass murderer.

I'm not. Someone else brought it up. It is simply an example of something Jesus and his followers wouldn't do.
But fine, let's use your porn example. Say you have dinner and tip your waiter $5 and he uses your $5 bill to go by porn on the way home. You just enabled his porn use every bit as much as if you were a mail carrier who happened to unknowingly deliver some porn to a customer in a brown paper envelope. Or say you hire a plumber for $100 to fix a leak and he uses the $100 you paid him for a night out on the town at a strip club. You enabled his behavior every bit as much as the taxi driver who happened to pick him up. Maybe more so.
If I knew that someone I was hiring was going to use the money to go buy a gun and kill someone or do something else immoral, I would not hire them or give them money.
If you interact with people in the economy your money will potentially be enabling whatever vices (and virtues) they might have. There is no possible way to avoid that other than to completely shun society and become a hermit.

Christians believe they are responsible not for themselves only but are also called to love their neighbour. I don't think it's right to sell people alcohol or cigarettes. I don't think it's right to sell guns and ammunition to people who will use it to go commit acts of violence.

So if I understand you, you would have difficulty working for a Walmart or a pharmacy too? Can you say more about who you would work for and who you would not work for?

Most conservative Anabaptists wouldn't work in a job where they sell cigarettes or tobacco. Some wouldn't want to sell guns or ammunition if they were being used for non-sporting purposes.

Basically, it's not a matter of whom I'd work for. It's a matter that I don't want to do things that are wrong. The fact an employer wants you to do something wrong doesn't make it right. I wouldn't work in a pharmacy where I had to dispense or sell abortion pills, for example.

I would like to read a good article as well, but am not sure how accurate it would be, as we maybe don't have all that these men wrote on the topic. And sometimes writers do not address all the caveats and nuances unless they are responding to some very particular beliefs.

For example, I do not believe in "self-defense", but you would need to ask me very specific questions and describe certain scenarios before you would have a good idea of what I believe on this topic. But that doesn't mean that I don't have some general things to say about the topic.

Yes, I agree with that. I once worked for a company that made software for developers. One day they asked me to teach a workshop at a military base. When I said I couldn't do that, they were going to fire me until someone on their board warned them that this could result in expensive lawsuits and then contacted me privately to let me know this had happened. Of course, I would not have sued, but I wasn't going to teach that workshop.

Personally, if I were delivering mail, I would think my service was to deliver mail, not to pick and choose. If I couldn't do that job, I wouldn't apply for it. But almost everything can be misused, and it's hard to control what people do with it.

I'd be comfortable making knives, for instance, but they can be used to murder someone. It's hard to know what lines to draw ...

Without looking it up, I recognize the quote from Hubmaier on the role of the state, because it's actually from the Schleitheim Confession. Perhaps GPT messed up? Unless they are dependent on the same source, or one of them is actually using the other's wording about something that they agree on.
