I would think this practise, followed in all details, would not be considered acceptable by most of today's Anabaptists. Yes, traditions change and this is a different tradition. In most cases, there is more difference between an English translation and a Greek text (whether taken from Byzantine or Alexandrian) than there is between Byzantine and Alexandrian texts. To argue the mode too strongly is to destroy the meaning. I don't really know of any good reason to prefer the one over the other, other than practicality.

About the only time I use a paper Bible is during church services. I'm strictly a computer / phone Bible student. Mostly computer. Just a pile handier.
